I took the time and browsed through the Skype forum today. It seems chances are rather bad to get a PDA that works seamlessly with Skype (many models without an XScale processor are not supported) and even less models have the necessary audio profile for bluetooth.
The best job according to posters there seem to do the Dell PDA Axim X30. But even this one seems to have his issues. However I ordered one today and will let know how this worksout I'm curious- it would be wonderfully disruptive device :-)

Skype & Bluetooth has really been working well for me - I've got a nice little set up using a Plantronics headset and although call quality isn't as good as landline, it's certainly working as it needs to so far. :)
Also, can't recommend these guys enough - really helped me getting my wireless Skype phone up and running:
